For over three decades the Fish Creek Market has been famous for its affordable sandwiches: the Norzwich in the language of Door County, in honor of its late originator Gerald Norz. Now the venerable grocery store is cutting waste with new packaging for the sandwich.
“We’ve been searching for recyclable or biodegradable packaging for a couple years, but it was hard to find a replacement for Styrofoam that didn’t force us to raise the price of the sandwich,” says owner Mike Hyde. The Fish Creek Market sandwich sells for just $5.50 with chips and a cookie. It is a favorite lunch of workmen, boaters, and Gibraltar School students.
Hyde tried switching to paper bags last year, but customers missed the tray that made for easy eating. This year, Hyde found a solution – a paper tray that serves both purposes.
“Customers seem to like it,” he says. “It’s recyclable, biodegradable, and it looks good.” It’s a simple change to make a big cut in waste.
The Fish Creek Market is open from 8 am – 8 pm daily, and also offers a full line of deli salads, specialty meats, and cheeses, in addition to a large selection of wine and gluten-free products.
