Andrew Will Cabernet Franc Columbia Valley 2010 Washington State

After our Petit Verdot tasting last week, we decided to hit up another Bordeaux blend varietal that is seeing more and more time as a leading role. The Cabernet Franc grape has become a more noticeable varietal by itself over the last few years, while maintaining its role as blending partner to Cabernet Sauvignon and Merlot in French and New World red blends.

Appearance: deep purple hue

Aroma: bright and vibrant blackberry and black cherry nose with a touch of spice

Flavors: fruit tones carry and add a tea component with some floral notes and supple tannins

Finishing Notes: well balanced with the fruit flavors going on and on, tannins carry through a very complex and long finish

Perfect Pairing: Cabernet Franc is a versatile food pairing wine that goes along well with ham, veal poultry and pork, as well as Mediterranean dishes and aged cheese. We would suggest a thinly sliced veal cutlet, breaded and sautéed with a tomato Milanese sauce with wild mushrooms and pancetta alongside a wilted green salad with toasted walnuts, blue cheese crumbles and a balsamic vinaigrette dressing.

Jody is the owner operator of Chop Restaurant in the Sister Bay Country Walk Shops and Karl is the General Manager and Executive Chef of the Mission Grille in Sister Bay. They have both been awarded the first level of certification from the Court of the Master Sommeliers.
