Chives Launching Breakfast Food Truck

The Chives food truck garden will add a new retro diner to their stable this May with the launch of a breakfast truck run by the owners of Morning Glory of Door County, the Sturgeon Bay and Southern Door breakfast staples. 

The diner, a converted 25-foot gooseneck trailer fabricated by Ray’s Welding And Custom Steel Fabricating Inc and reminiscent of a classic American diner, will round out the meal offerings that already includes Chives Grill and Griddle and Harbor Pizza Company. The Chives to Go Bar will open early to serve coffee, mimosas, bloody marys, and other breakfast-centric specialty cocktails. 

It builds on a new business concept by Chives owner, JR Schoenfeld. Shifting from a food truck court run entirely by Chives Staff, the trucks will be owned by Chives but will each be managed independently by chef entrepreneurs. Functioning similarly to a co-op, the model gives managers a format to grow their skills and deliver an exciting mix of offerings to downtown Baileys Harbor. 

Morning Glory owners German and Nerymar Ramirez have worked both back and front house since 2010, purchasing the restaurant in 2015. In 2021 the pair opened Morning Glory by the Bay in downtown Sturgeon Bay. 

“We fell in love with the restaurant. Our happiness comes out of serving our customers. We are excited to spread our service further north up the peninsula and operate the mobile diner,” said Nerymar.
