“Mushrooms Galore” at Savory Spoon Cooking School

Fall is a good season to take a cooking class as Savory Spoon Cooking School has an international cooking class as well as a feature class on mushrooms.

On Sept. 26 at 6 pm, travel the world during “In Good Tastes.” In this class you will learn to make mayonnaise, custard and some poaching tips using farm fresh Wisconsin eggs.

 Menu includes:

 fresh greens with Manchego and olive relish
; 
Orecchiette Carbonara with leeks
; eggs poached in tomato bath with French feta
; chicken Parmigianino; and baked custard with Bananas Foster
. The class is $65.

On Oct. 2 at 6 pm, take “Mushrooms Galore.” For many, the allure of wild mushrooms coaxes them into the forest in the fall. Door County mushrooms tend to get most love in the spring when all are in search of the precious morel mushroom. Morel mushrooms become an annual obsession for many, but late summer and fall are when the woods yield the largest array of mushrooms ripening and ready for the frying pan.

The Savory Spoon will have mushroom experts Mary Ellen and Joe Krawczyk of Field and Forest Products in Peshtigo return for this mushroom extravaganza. The menu includes:

 mushroom bacon phyllo triangles
; crispy grits with sweet and sour beets and wild mushrooms
; 
wild mushrooms and haricot verts
; pizza with potato, onion marmalade and mushrooms
; pan roasted tenderloin with mushrooms. The cost is $65.
