Tom Smith Serves as Guest Chef at Savory Spoon

Savory Spoon Cooking School in Ellison Bay offers culinary educational opportunities throughout September.
On Sept. 24 guest chef Tom Smith, formerly of T Ashwell’s Restaurant in Ellison Bay, will share his passion for using the freshest ingredients in preparing appetizers. Participants will learn to cook the following menu: Escargot Ala Ashwell, sauteed jumbo Helix snails simmered in a basil pesto cream sauce with caramelized apples; Fois Gras Stuffed Mission Figs, wrapped in prosciutto, baked and served with a cassis demi sauce; Beef Tip Au Poivre “Fondue,” grilled beef tips seasoned with cracked black pepper with a peppercorn, veal demi and marsala dipping sauce; and roasted baby beet, chevre and arugula crostini with chili honey drizzle.
On Sept. 29 from 2 – 4 pm, Savory Spoon will host a Knife Skills Workshop presented by Peggy Taylor, from Henkel/Zwilling Knives.
Taylor will teach participants how to use a great knife and feel comfortable while cooking.
Participants will be able to pre-order knives at a 30 percent savings; pre-orders will be taken until Sept. 18.
