Weekend ReCAP

1_At quitting time on Friday I joined Carol in the Pulse garden to collect rotten tomatoes, soon to be slung in the weeds (and the outside wall). We still harvested a bountiful basket of “good stuffs” including tomatoes, tomatillos, squash, cucumbers, potatoes, broccoli, and basil.

2_As a former runner for the UW-Green Bay cross-country team, I naturally went to the annual Cross-Country Alumni Picnic Saturday afternoon in Green Bay. It was great to see some of the guys who made it up, down, out…wherever they came from. Good food, good company, good times.

3_A crisp Sunday morning persuaded me to take an extra long autumnal (official) hike through Peninsula State Park. Camera in tow, I meandered a “secret” trail(s). Okay, it wasn’t secret, but it seemed like it as I only encountered woodpeckers, foraging squirrels, and deer. Moral: take the path less travelled and get lost for a few hours…quite pleasant.

4_3 cups lightly packed fresh basil, 1/2 cup olive oil, 2 cloves garlic, 1/2 cup grated Parmesan, and – a “besto” alternative to pine nuts – 1/3 cup of pistachios. Salt/spice to taste and blend it up to a coarse texture. Presto! The perfecto pesto.
