Catch and Release at Kristofer’s

Terri Milligan, co-owner and chef at the Inn at Kristofer’s, will be presenting a “Catch and Release” gourmet, five-course, wine dinner and demonstration cooking class on Friday, January 16. The event will focus on the use of sustainable seafood in a variety of gourmet dishes.

“Fish and shellfish were once viewed as an inexhaustible resource. But we’re rapidly proving this old adage wrong,” explained Milligan. “Many people are not sure which seafoods and fish are endangered. I will not only be using sustainable seafood and fish in the class and at dinner, I will also be supplying the individuals attending with a read out of sustainable shellfish and fish. Hopefully the class will help individuals attending feel more comfortable preparing fresh shellfish and fish at home.”

Recipes to be demonstrated in the class include a first course trio of sustainable seafood (a sampler with a West Coast oyster “duncked” in champagne hollandaise, a spinach and Nueske bacon stuffed New Zealand green lip mussel and a portion of seared Hawaiian ahi tuna with avocado puree), a salad of fresh arugula and fennel with a grilled calamari steak dressed in a lemon mint vinaigrette, a blood orange sorbet cleanser, and a main course of organic British Columbia salmon with Napa cabbage confit with a shiitake mushroom ginger beurre blanc. Dessert will be a delicious lemon mousse tower with fresh berries.

The event begins with a one-hour cooking demonstration by Chef Milligan in the restaurant’s second floor cooking classroom. Following the demonstration class, guests will be seated in the restaurant’s main dining room over looking the waters of Green Bay. The five-course dinner will be paired with two special wines selected by restaurant co-owner Kris Milligan.

The cost of the Catch and Release event is $67 per person and includes the one-hour demonstration cooking class, the five-course dinner with two wine pours, a copy of all the recipes and sales tax. Seating is limited to 24 people.

The Inn at Kristofer’s is open nightly through out the winter for dinner beginning at 5 pm. The restaurant is closed on Tuesday evenings, but during the week of New Years the restaurant will be open every evening.
