Server of the Week: Carlton Collins, Chives

It was back in 1980, in the restaurant now called Chives.

Young Carlton got his first gig – at the sink he pearl-dived.

Washing dishes was fun at first, but he soon said “See ya later,” 

In ‘21 he came back on board as an expert-level waiter.

Even if you can’t see him, you can easily find his section.

You’ll hear the laughter from his guests, as he gives menu direction.

A day off work at a local beach – Carlton’s idea of heaven,

Relaxing with his wife and kids – three littles under seven.

Tending to his chicken brood is a nice break from the hustle.
