Indian Cuisine in the Heartland

Madison cooking instructor Neeta Saluja’s first cookbook, Six Spices: A Simple Concept of Indian Cooking, was selected as a 2007 summer read by The New York Times, and Saluja will travel to the Washington Island Hotel and Culinary School for a cooking demonstration on August 9.

In this cooking demo, Saluja offers tips on using six spices – asafetida, chilies, coriander, cumin seeds, mustard seeds and turmeric – in authentic Indian dishes featuring the bounty of summer from local farmers. Enjoy samples of several Indian dishes as Saluja shares some history of Indian cuisine as well as memories of growing up in Bhopal.

The demonstration will take place on Saturday, August 9 from 2 – 4 pm. Cost is $60 and includes wine pairings.
