Mojo’s Dark and Stormy

The perfect summer cocktail can be hard to find. It needs to be flexible. One must be able to combine the cocktail with any appetizer, mood swing, or weather condition. It’s got to pair well with rain, sunshine, and humidity. It has to be crisp and refreshing with standout flavor, but not so overwhelming that you can’t drink two. The Dark and Stormy, a drink featured on the cocktail list at Mojo Rosa’s Cantina and Pub in Egg Harbor, is the right drink for the job.

This Bermudian creation combines two ounces dark rum, three ounces ginger beer and a half-ounce of lime juice. While no true Bermudian would put lime in their Dark and Stormy, the extra zest adds loads to the overall flavor. Making the perfect Dark and Stormy requires mastering the delicate ratio between the spiciness of the ginger beer and the richness of the rum. The choice of rum also plays an important role: at Mojo Rosa’s, they use Meyer’s dark rum and Stewart’s ginger beer.

If you’re mixing at home, Bermuda’s own Gosling’s Black Seal mixes an authentic cocktail, but anything dark and funky will work. As for the ginger beer, Barritt’s is from Bermuda, but anything will work as long as it’s ginger beer and not ginger ale.
