Pulse Family Thanksgiving: Dessert

Pumpkin Pie Squares

All three layers of pumpkin bars are divine on their own – there is the flaky crust, the creamy, classic pumpkin pie filling, and the crispy and sweet topping that combine to make a tasty Thanksgiving dessert. They are a favorite among the Slattery household!

Crust:
1/2 cup butter
1/2 cup brown sugar
1 cup flour
1/2 cup rolled oats

Cream butter with sugar until fluffy. Add oats and flour. Mix until crumbly. Press into ungreased 9” by 13” pan. Bake at 350 degrees for 15 minutes.

Filling:
1 can (1 lb.) pumpkin (2 cups)
2 eggs
1 can (13 ½ oz.) evaporated milk
3/4 cup sugar
1 tsp cinnamon
1/2 tsp. salt
1/2 tsp. ginger
1/4 tsp. cloves

Combine ingredients in mixing bowl. Beat well; pour onto crust. Bake at 350 degrees for 20 minutes. Remove from oven.

Topping:

1/2 cup brown sugar
1/2 cup chopped pecans
2 tbsp. butter

Blend ingredients. Sprinkle over pumpkin filling. Return to oven and bake 15 – 20 minutes or until filling is set. Cool in pan then cut in two-inch squares. Makes two dozen. Top each square with a teaspoon of whipped cream or Cool Whip.
