Skare to Give “Green Building Project” Presentation

Dick Skare, co-owner of The Cookery in Fish Creek, is scheduled to give a presentation at the Wisconsin Restaurant Expo, outlining environmentally friendly aspects of the restaurant’s new building.

The presentation on March 8 is a result of a $10,000 grant that The Cookery received last year from the Wisconsin Office of Energy Independence (OEI). This grant assisted The Cookery in purchasing and installing energy efficient equipment in the new restaurant. A portion of the funds from the grant were designated by the OEI to be used towards developing and delivering a seminar on energy efficient appliances to food service industry professionals.

In his presentation Skare plans to share an outline of the sustainable choices made in building the new restaurant both inside and outside the building. Skare will also detail data collected on energy and water savings, which includes a decrease in water usage in the new building by 45 percent as well as a decrease in electricity usage by 44 percent. Even though the new building is substantially larger, the decreases can be attributed to “green” building initiatives, more efficient equipment and daily practices in place at the restaurant.
