Spritz: a New Pop-Up Concept at Goose & Twigs

Goose & Twigs Lodging in Sister Bay has debuted a new food-and-drink concept called Spritz to attract guests coming and going on Friday and Saturday evenings. The idea is modeled after the Italian aperitivo: a few hours between the end of the workday and before dinner that are filled with nibbling on snacks and sipping drinks. 

“Ever since leaving Italy, I’ve been thinking about a concept like this,” said Ryan Castelez, who helped to develop and manage the new menu. The drinks and bites are being served outdoors from the covered patio of Goose & Twigs at 2322 Mill Road, and guests are encouraged to spread out on the lawn and at the patio tables. 

Renata Gallardo, Goose & Twigs co-owner with her husband, Gustavo, is responsible for the delicious small plates. 

“She puts out really good bites – simple food, but done really, really well,” Castelez said. The snack menu offers six light food options at $3 each, or sample them all for $15. On the drinks side, choose from seven varied beer options, eight wines and five house cocktails, which are low proof and expertly crafted. Everything is presented beautifully, and it’s a great way to start or end an evening. 

“We’ve been finding that guests like to stop by on their way out for the night, and then they stop again after,” Gustavo said. Spritz is open Friday and Saturday nights, 5-9 pm.
