Talking Up The Tataki

Tataki is a Japanese cooking method typically used to prepare tuna. The process involves searing the fish briefly on each side in a very hot pan or grill. After searing, the tuna is dipped in an ice bath to quickly stop the cooking process. Once chilled, the tuna is sliced and served with soy sauce. The finished dish presents two appealing textures: savory, seared exterior and raw interior enhanced by sweet and citrusy flavors. Served with a sesame crust and a tangy yuzu sauce, tuna tataki is available as a small plate at Barringer’s at lunch and dinner.
