Avoiding A Raw Deal: Oyster Options

Raw oysters are loved by many, but some diners find the presentation to be a bit intimidating. An alternative for the latter group is a supper club classic: Oysters Rockefeller. Baked in the shell with butter, garlic, spinach and herbs, Oysters Rockefeller make a great start to a special evening out.

Prefer an oyster that doesn’t come from the ocean? To some palates, oyster mushrooms have a briny flavor reminiscent of seafood. As an ingredient, chefs find the dense texture of an oyster mushroom holds up well in the pan or fryer.
