Wining and Dining Gourmet Dinner and Cooking Class At Kristofer’s

Chef Terri Milligan has announced a special cooking class and wine dinner event slated for Friday, Feb. 29 at her restaurant, The Inn at Kristofer’s.

The Pacific Northwest Wining and Dining Gourmet Dinner and Cooking Class will focus on the foods and wines of Oregon, California, and Alaska. Ingredients will include Oregon hazelnuts, Pacific oysters, Washington State pears and organic King Salmon from British Columbia.

“The Pacific Northwest is becoming a major force in wine production. This special event will showcase the wineries from the area and pair two specially selected wines with some exquisite area foods,” explained Milligan. “One of the items I am most excited to demonstrate in our cooking class is the use of a special cedar cooking paper that will be used with the organic King Salmon. The cedar paper looks somewhat like parchment paper, but is soaked in water, wine or bourbon and wrapped around the individual salmon filets. It is a great way for a home cook to get cedar flavor without having to use a large cedar plank.”

The event begins with complimentary champagne followed by a one hour cooking class in Kristofer’s second floor demonstration kitchen featuring the preparation of the evening’s dinner menu. Following class, participants will enjoy a delicious four-course dinner served in the restaurants elegant main dining room overlooking the waters of Green Bay. The dinner will include two glasses of wine from the Pacific Northwest area as well as the following menu:
• Pacific oysters Kristofer’s (oysters prepared with shallots, fresh herbs, garlic and Japanese breadcrumbs)
• Montrachet and beet tower salad with tangerine balsamic vinaigrette and toasted hazelnuts
• Pear and ginger sorbet cleanser
• Organic King salmon prepared in bourbon soaked cedar paper
• Hazelnut soufflé with bittersweet chocolate sauce

The cost of the special dinner and cooking class is $67 per person and includes complimentary champagne upon arrival, a one-hour cooking class, four-course dinner, two glasses of wine, tax and gratuity. Class size is limited to 24 people and pre-registration is required.
