Hacienda Brings Back the Brews

Last weekend, Hacienda Beer Co., 8099 Hwy 57 in Baileys Harbor, released See Ya Later: another collaborative beer from its oak cellar. The Hacienda brewers created this one with brewers from the Marquette, Michigan-based Barrel + Beam.

The crew from Barrel + Beam joined the Hacienda team in Baileys Harbor in the fall of 2019 to brew a koelschip beer with lots of foraged ingredients. Barrel + Beam foraged juniper boughs in Michigan, and Hacienda harvested sumac cones from around Door County.

The beer then spent a year and a half in oak barrels before conditioning in bottles for the past six months. The result? See Ya Later has notes of juniper, cider, charred lemon and melon, with balanced funk and acid profiles.

The Way You Make Me Feel, one of Hacienda’s cocktail-inspired IPAs, also returned last weekend. Hacienda incorporated ingredients based on the Floradora cocktail: juniper berries, ginger root, lime juice and red raspberry, as well as lactose sugar to provide a creamy, full body. The brewers hopped the beer in the kettle and dry-hopped with a bunch of Motueka and Simcoe to further amp up the lime, berry and resinous character.

Want even more? Hacienda has released its Black Friday lineup as well. It includes four variations on its Velvet Bulldozer and L’hiver 2021/2022.
